A not so tough cookie:


No, these cookies are not tough..... but they are crisp and 
delicious with a cup of tea or a glass of milk! If you are 
looking for an update on the classic chocolate chip cookie, 
try my white chocolate and clementine cookies!


You will need:
2 1/4 cups all purpose flour
1 tsp salt
1 tsp baking soda
1 cup butter at room temp.
1/2 cup sugar lightly packed
1/2 cup brown sugar lightly packed
1 egg
1/2 tsp vanilla extract
1/2 tsp almond extract
2 cup white chocolate chips
2 tbsp clementine zest (about 4 clementines)

Let's get started:
1: Preheat oven to 375 degrees.
2: Combine flour, salt, and baking soda in a 
    medium bowl and set aside:

3: In a standard mixer, blend butter and sugars until creamy (scrape the sides and bottom of the bowl as needed during mixing).
4: Add egg, vanilla, and almond extract:

5: Add flour mixture by the tablespoon until well incorporated:

6: Add white chocolate chips and clementine zest:

7: stir ingredients to combine:

6: Spoon batter in tablespoon sized portions onto a cookie sheet lined with parchment paper:

7: Bake on the middle racks of the oven for 11 minutes or until edges are a golden brown.
8: let cool on cookie sheet for one minute before transferring to a cooling rack:

9: Devour!

  1. This recipe is a MUST TRY! especially in the summer time, the clementine zest really makes these little cookies taste fresh!
